  • Quince fruit  900 g
  • Water  480 ml
  • Lemon juice  2 tbsp
  • Sugar  400 g

In a large saucepan, combine the chopped quince, water and lemon juice.
Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer for 30 minutes, or until the quince is tender.

Using a fine-mesh sieve or cheesecloth, strain the quince mixture to remove any solids. Measure the liquid and return it to the saucepan.
Add the sugar to the saucepan and stir well. Bring the mixture to a boil over medium heat, stirring occasionally.
