A good second course with meat and mushrooms. It's better to serve it in the same dish it was prepared in.

Ingredients

  • Boneless pork  0.5 kg
  • Vegetable oil  4 tbsp
  • Onion  2 pcs
  • Carrot  1 pc
  • Potato  5-6 pcs
  • Mushrooms  150-200 g
  • Salt
  • Black pepper
  • Dried basil
  • Broth  150 ml
  • Chopped greens  1 tbsp

For marinade

  • Soy sauce  1 tbsp
  • Honey  1 tbsp
  • Brandy  1 tbsp
  • Balsamic vinegar  1 tbsp
  • Nutmeg  a pinch

Step 1

Cut the meat into large pieces. It needs to be marinated. You can choose your favorite marinade. I like this marinade (soy sauce, honey, brandy, balsamic vinegar in equal parts and a little nutmeg). Marinate the meat well overnight for 8-12 hours. Fry the meat until golden brown in 4 tablespoons of vegetable oil.
Cut 2 onions into quarter rings. Grate 1 long carrot. Peel and cut 5-6 potatoes into thin wedges like for French fries.

Layer onion, then carrot on the bottom of a baking dish. Then layer half of the potatoes. Season with salt and pepper and sprinkle with dried basil.
Cut 150-200g mushrooms into slices and spread on the potatoes.

Layer the remaining potatoes on top of the mushrooms. Season with salt, pepper, and basil. Place the meat on top of the potatoes. Take 150 ml of prepared broth or dissolve a bouillon cube, mix with the fat in which the meat was fried and pour over the meat and vegetables.

Wrap everything in two layers of foil and put in the oven for 1 hour at a temperature of 200 degrees.
If you want the meat to be a bit browned on top, open the foil and put it back in the oven for another 10-15 minutes. Garnish with chopped herbs and enjoy your meal!

On top of the mushrooms - potatoes. Salt, pepper and season with basil. Place the meat on top of the potatoes. Take 150 ml of cooked broth or dilute the bouillon cube, mix with the fat in which the meat was roasted and pour over the roast.

Wrap everything in two layers of foil and put in the oven for 1 hour at 200 degrees.
If you want the roast to brown a little on top, cut the foil and put it in the oven for another 10-15 minutes. Sprinkle the finished roast with chopped greens.
