Preheat the oven to 425°F (220°C).
Cut the sweet potatoes into thin, even-sized fries.
In a large bowl, toss the sweet potato fries with olive oil, salt, paprika, garlic powder, and cornstarch until well coated.
Spread the fries in a single layer on a baking sheet lined with parchment paper.
Bake for 20 minutes, then flip the fries and bake for an additional 10 minutes or until crispy and golden brown.
