In a large bowl, combine the all-purpose flour and salt for the dough. Add the cold cubed butter and mix it into the flour using your hands or a pastry cutter until the mixture resembles coarse crumbs.
Gradually add cold water, 1 tablespoon at a time, mixing until the dough comes together. Divide the dough into two equal portions and shape them into discs. Wrap each disc in plastic wrap and refrigerate for at least 30 minutes.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, about 5 minutes. Remove from heat and let it cool.
In a bowl, combine the cooked spinach, crumbled feta cheese, beaten egg, salt, and pepper for the filling. Mix well.
