- Ketchup — 180 ml
- Brown sugar — 1/4 cup (60g)
- Table vinegar 9% — 60 ml (or cider vinegar)
- Worcestershire sauce — 2 tbsp
- Mustard — 1 tbsp

In a small bowl, combine chili powder, cayenne pepper, paprika, garlic powder, brown sugar, salt, and black pepper to make the rub for the brisket.
Rub the spice mixture all over the beef brisket, making sure to coat all sides. Wrap the brisket tightly in plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
Preheat your barbecue smoker to 225°F (107°C).
Remove the brisket from the refrigerator and unwrap. Place the brisket directly on the smoker grate, fat side up.
Close the smoker and cook the brisket for about 1 hour per pound, or until the internal temperature reaches 195°F (90°C).
