In a large bowl, combine the flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
In a separate small bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until foamy. Add the egg yolks and vanilla extract to the yeast mixture and whisk to combine.
Pour the yeast mixture into the dry ingredients and mix until a dough forms. Knead the dough on a lightly floured surface for 5 minutes until it becomes smooth and elastic.
