In a large saucepan, combine the chopped quince, water and lemon juice.
Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer for 30 minutes, or until the quince is tender.
Using a fine-mesh sieve or cheesecloth, strain the quince mixture to remove any solids. Measure the liquid and return it to the saucepan.
Add the sugar to the saucepan and stir well. Bring the mixture to a boil over medium heat, stirring occasionally.
Reduce the heat and simmer for about 30 minutes, or until the mixture thickens and reaches the desired consistency.
Pour the hot jelly into sterilized jars, leaving a 0.6 cm headspace. Seal the jars and process them in a water bath canner for 10 minutes.
Remove the jars from the canner and let them cool completely. Store the Quince Jelly in a cool, dark place for up to 1 year.
