- Beef bones βΒ 2 lbs (900 g)
- Yellow onion βΒ 1 large
- Ginger βΒ 3-inch (7.5 cm) piece
- Cinnamon stick βΒ 1
- Star anise βΒ 2
- Cloves βΒ 4
- Coriander seeds βΒ 1 tbsp
- Rock sugar βΒ 1 tbsp
- Fish Sauce βΒ 2 tbsp
- Salt βΒ to taste
Noodle and Toppings
- Rice noodles βΒ 8 oz (225 g)
- Beef sirloin βΒ 8 oz (225 g), thinly sliced
- Bean sprouts βΒ 1 cup (150 g)
- Fresh cilantro βΒ 1/2 cup (15 g), chopped
- Thai basil leaves βΒ 1/2 cup (15 g)
- Lime Wedges βΒ 4
- Hoisin sauce βΒ to taste
- Sriracha Sauce βΒ to taste
- Sliced jalapenos βΒ to taste

Cooking Instructions!
Place beef bones in a large pot and cover with water. Bring to a boil and cook for 5 minutes. Drain, rinse the bones, and clean the pot.
Return the bones to the pot and add onion, ginger, cinnamon stick, star anise, cloves, coriander seeds, and rock sugar. Fill the pot with enough water to cover the bones. Bring to a boil, reduce heat, and simmer for 2 hours.
After 2 hours, remove the bones from the broth. Strain the broth into another pot or a large bowl. Season with fish sauce and salt to taste.
Cook the rice noodles according to package instructions. Drain and divide among serving bowls.
Top the noodles with sliced beef sirloin. Pour the hot broth over the beef and noodles.
Serve Pho hot, garnished with bean sprouts, cilantro, Thai basil, lime wedges, hoisin sauce, sriracha sauce, and sliced jalapenos. Enjoy!
