Crust
- Flour — 150 g

- Light Corn Syrup — 240 ml
- Sugar — 150 g
- Butter — 2 tbsp, melted
- Vanilla extract — 1 tsp
- Salt — 1/4 tsp

Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the flour, granulated sugar and salt. Add the cold unsalted butter and mix until the mixture resembles coarse crumbs.
Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough comes together.
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
On a lightly floured surface, roll out the dough to fit a 9-inch (23cm) pie dish. Transfer the dough to the dish and press it gently to fit. Trim any excess dough and crimp the edges.
In a medium mixing bowl, whisk together the eggs, light corn syrup, granulated sugar, melted unsalted butter, vanilla extract, and salt.
Spread the chopped pecans evenly over the bottom of the pie crust.
Pour the filling mixture over the pecans, making sure they are well coated.
Bake in preheated oven for 50-60 minutes or until filling is set and crust is golden brown.
Let the pie cool completely before serving. Serve with whipped cream or vanilla ice cream, if desired.
