Cooking Instructions!
Prepare all necessary ingredients. Rinse and dry the greens.
Boil the eggs over medium heat for 15 minutes after boiling. Then pour cold water and allow to cool completely. This can be done in advance, then preparing the snack will take only a few minutes. Peel the eggs and separate the whites and yolks.
Drain the liquid from the canned fish (I used tuna). Mash the fish with a fork and transfer to a bowl.
Grate the cheese on a medium grater and add to the bowl with the fish.
Grate the egg whites on a medium or fine grater and place them next to the cheese and fish.
Add mayonnaise to the bowl and mix.
If the mixture is still too dry, add some more mayonnaise. Season with pepper, salt if necessary, and mix once more.
Roll the fish mixture into balls the size of a walnut. I ended up with 10 balls.
Grate or mash the remaining yolks into crumbs.
Roll each ball in the yolks and place on a plate.
The Mimosa fish snack balls are ready. Garnish with greens and serve.
Enjoy your meal!
