For the New Year's table, I decided to serve a hot meat dish in a way that guests could serve themselves. As there are many dishes at the holiday, guests could take a small portion. And so the idea of a meat roll was born.
Ingredients
- Pork βΒ 600 g
- Bacon βΒ 150 g
- Grape vinegar βΒ 2 tbsp
- Vegetable oil βΒ 2 tbsp
- Salt βΒ to taste

- Black pepper βΒ 1/2 tsp
- Paprika βΒ 1/2 tsp
- Cumin βΒ 1 tsp
- Sesame seeds βΒ 1 tsp

Cooking Instructions!
For the initial piece of meat, it is recommended to use pork shoulder.
Cut the piece and flatten it to a thickness of 1 cm.
For the marinade, add wine vinegar, spices, and half a portion of caraway seeds to vegetable oil.
Spread the marinade on both sides of the meat and let it marinate in the refrigerator for 4-5 hours
Sprinkle the remaining half portion of caraway seeds and sesame seeds on the marinated meat at room temperature.
Lay slices of bacon in a solid layer on the meat.
Roll the meat into a roulade and tie it with a string or secure it with toothpicks.
Place the roulade in a preheated oven at a temperature of 220-240 C and cover it with foil.
Remove the foil after 40 minutes.
The cooking time for an 8 cm diameter roulade is 1 hour.
Serve it hot or cold as a meat appetizer.
