The appetizer made from rhubarb is very simple to prepare: we pour the stalks into a marinade of vinegar, ginger and red pepper, and leave them to marinate in the refrigerator. The pieces of rhubarb turn out to be sour enough and moderately spicy. Such an appetizer would be a good addition to meat. Marinated rhubarb can also be added to vegetable salads.
Ingredients
- Rhubarb (cleaned stems) — 280 g
- Water — 400 ml
- Ground ginger — 0.5 tsp
- Red hot pepper flakes — 0.5 tsp
- Table vinegar 9% — 3 tbsp
- Bay leaf — 1 pc
- Sugar — 2 tbsp
- Salt — 1 tsp

Prepare the necessary ingredients. You will also need several jars of small capacity with screw-on lids, which must be thoroughly washed and dried.
Pour 400 ml of water into a pot or other suitable container, add spices, salt and sugar. Put on the heat, bring to a boil, and simmer for 2-3 minutes.
While the marinade is cooking, wash and peel the rhubarb stalks and refresh the cuts.
Cut the rhubarb into small pieces, about 1.5 cm in size.
Remove the pot from the heat and add vinegar. Mix the marinade.
In clean, dry jars, place the prepared pieces of rhubarb. I was able to fill three jars with a capacity of 200 ml.
Strain the marinade.
Pour the marinade over the rhubarb, covering the pieces.
Close the jars with lids and place them in the refrigerator for 8 hours.
