Heat oil in a large saucepan over medium heat. Add mustard seeds, cumin seeds and red chili flakes. Cook until fragrant, about 1 minute.
Add chopped onion, minced garlic and grated ginger to the saucepan. Sauté until the onion becomes translucent, about 5 minutes. Add the fresh gooseberries, sugar, white vinegar and salt to the pan. Stir well to combine all the ingredients. Reduce the heat to low and simmer the mixture for about 20-25 minutes or until the gooseberries are soft and the chutney has thickened.
Remove from heat and let the chutney cool down completely. Transfer it to airtight jars or containers and refrigerate for at least 24 hours before serving.
