Cooking Instructions!
Heat butter in a large soup pot over medium-low heat. Add sliced onions and cook, stirring occasionally, until they become caramelized and golden brown (about 35-40 minutes).
Sprinkle flour over the caramelized onions and mix well to coat. Cook for an additional 2 minutes, stirring constantly.
Slowly pour in beef broth and white wine, stirring to combine. Add thyme sprigs, bay leaf, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes to allow the flavors to meld.
While the soup simmers, preheat the broiler. Slice the baguette into thick slices and toast them until golden brown on both sides.
Ladle the hot soup into oven-safe bowls. Place a slice of toasted baguette on top of each bowl and sprinkle grated Gruyere cheese over the bread.
Transfer the bowls to the broiler and broil for 2-3 minutes, or until the cheese is melted and bubbly.
Serve the French Onion Soup hot, garnished with extra thyme leaves if desired.
