Fast fermented cabbage
Just a few hours of marinating cabbage with carrots and garlic in a marinade of vegetable oil and vinegar - and you'll have a great appetizer on your table!
Ingredients
- White cabbage — 1 kg
- Carrots — 2-3 pcs.
- Garlic — 3-4 cloves
For marinade
- Water — 500 ml
- Vegetable oil — 0.5 cup
- Table vinegar 9% — 10 tbsp.
- Granulated sugar — 0.5 cup
- Coarse ground salt — 1 tbsp.
- Black Peppercorns — 4-5 pcs.
- Allspice Peppercorns — 3-4 pcs.

Prepare the ingredients.
Cut the cabbage thinly. Peel the carrots and grate them on a coarse grater.
Peel the garlic and press it through a garlic press. Mix the cabbage with the carrots and garlic.
Fill a pot with water and bring it to a boil. Add sugar, salt, and pepper. Mix until dissolved. Add oil and vinegar. Stir. Bring the marinade to a boil.
Pour the hot marinade over the cabbage. Cover the cabbage with a plate of suitable diameter, press and put a weight on top (for example, a jar of water).
Leave the cabbage to marinate at room temperature. After 4-5 hours, the marinated cabbage will be ready.
