- Chicken or Vegetable Broth βΒ 4 cups (960ml)
- Heavy Cream βΒ 1 cup (240ml)
- Salt βΒ 1 tsp (5g)
- Black pepper βΒ 1/2 tsp (2.5g)

Clean and slice the mushrooms.
Melt the butter in a large pot over medium heat. Add the onion and garlic, and cook until softened.
Add the sliced mushrooms and cook until they release their liquid and start to brown.
Sprinkle flour over the mushroom mixture and stir to coat everything evenly.
Slowly pour in the chicken or vegetable broth while stirring continuously.
Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
Using an immersion blender or a regular blender, puree the soup until smooth.
Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
Simmer for another 5 minutes, until heated through.
Serve hot and garnish with additional fresh mushrooms, if desired.
