Cold appetizer of chicken hearts in garlic-soy marinade

First, we will boil the hearts and then add herbs and onion rings. Then we will marinate them with soy sauce, vinegar, and flavorful garlic oil. This will result in tender and soft hearts with a spicy taste.
Ingredients

- Onion βΒ 200 g
- Garlic βΒ 15 g
- Herbs βΒ 30 g
- Table vinegar 9% βΒ 40 ml
- Soy sauce βΒ 50 ml
- Bay leaf βΒ 2 pc
- Allspice peas βΒ 2 pc
- Dried cloves βΒ 1 pc
- Vegetable oil βΒ 70 ml
- Salt βΒ to taste

Prepare all ingredients.
Thoroughly rinse the chicken hearts with cold running water.
Remove the fat. Cut the hearts in half and remove the blood clots. Rinse the hearts well with cold water.
Transfer the hearts to a cooking pot. Pour in cold water and bring to a boil. Add bay leaf, allspice, cloves, and salt. Cook over low heat until done, approximately 35-40 minutes. Remove any foam that forms with a slotted spoon.
Peel and thinly slice the onion into half-moons. Massage with your hands to release the juices and soften it.
Rinse the herbs, parsley and dill in my case. Trim and remove the stems. Finely chop the leaves and add to the onion.
Peel the garlic. Set aside half of it. Finely chop or press the other half and add it to the onion. Mix well.
Drain the cooked chicken hearts in a colander. Discard the bay leaf. You may leave the allspice. Rinse the hearts with cold water and shake them a few times to remove any excess liquid.
Add the chicken hearts to the onion mixture. Mix well.
Heat the vegetable oil in a frying pan. Crush the remaining garlic with a knife and add it to the hot oil. Fry for about 1 minute until the garlic is fragrant. Remove the garlic from the pan.
Pour the fragrant oil over the hearts. Add ground black pepper. Dilute the vinegar with water (60 ml) and pour it over the rest of the ingredients. Add soy sauce. Season with salt to taste, keeping in mind that soy sauce is also salty.
Mix well. There should be a lot of marinade. If desired, add a little sugar. Cover with plastic wrap or a lid and marinate in the refrigerator for 2 hours. Stir occasionally to evenly marinate all ingredients.
Arrange the marinated chicken hearts with onion on a plate without the marinade.
Serve marinated chicken hearts with onion as a cold appetizer.
