Cooking Instructions!
In a pan, heat olive oil over medium heat. Add chopped onions, bell peppers, and garlic. Sauté for 2-3 minutes until softened.
Add the diced chicken breast to the pan. Cook for 5-6 minutes until the chicken is cooked through.
Add cumin powder, chili powder, salt, and black pepper to the chicken mixture. Stir well to coat the chicken evenly with the spices. Cook for an additional 2 minutes.
Place a flour tortilla on a flat surface. Spread a layer of the chicken filling on one half of the tortilla. Sprinkle shredded cheddar cheese on top of the chicken.
Fold the tortilla in half to create a half-moon shape. Repeat this process for the remaining tortillas and filling.
Melt butter in a large skillet over medium heat. Place the quesadillas in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
Remove the quesadillas from the skillet and let them cool for a few minutes. Cut each quesadilla into wedges.
Serve the chicken quesadillas warm with salsa, guacamole or sour cream.
Enjoy!
