Cooking Instructions!
Wash the carrots thoroughly and peel them. Cut the carrots into thin rounds or sticks, whichever shape you prefer.
Place the carrot rounds or sticks, garlic cloves, and fresh dill sprigs into a clean glass jar with a lid.
In a small saucepan, combine the white vinegar, water, granulated sugar, salt, mustard seeds and whole black peppercorns. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar and salt dissolve completely.
Once the vinegar mixture reaches a boil, remove it from the heat and let it cool for a few minutes.
Pour the cooled vinegar mixture over the carrots in the glass jar, making sure they are completely covered.
Screw the lid tightly onto the jar and let it cool to room temperature.
Refrigerate the jar of carrot pickles for at least 24 hours before serving.
These Carrot Pickles can be stored in the refrigerator for up to 2 weeks. Serve chilled and enjoy!
