Botvinya is considered a special cold soup. It is based on healthy young beets, their stems, sorrel, spinach, young nettle leaves, dill, parsley, and fresh cucumbers. Botvinya's base is no less rich in its ingredients, which include beet broth, fish or meat broth, white and bread kvass, horseradish and mustard. Try this legendary dish at least once!
Ingredients
- Fish — 500g
- Boiled beets — 2 pcs.
- Cucumbers — 2 pcs.
- Beet greens — 150g
- Stems of beet greens — 8-9 pcs.
- Sorrel — 125g
- Spinach — 125g
- Nettle — 150g
- Green onions — 30g
- Parsley — 30g
- Dill — 30g
- Salt — 1 tsp.
- Bay leaves — 2 pcs.
For the base broth
- Beet broth — 250ml
- Fish broth — 250ml
- White kvass — 250ml
- Bread kvass — 500ml
- Salt — 0.5 tsp.
- Sugar — 1 tbsp.
- Mustard — 1/2 tsp.
- Horseradish — 1 tsp.
- Ground pepper — 1/2 tsp.
- Lemon (juice) — 1/2 pc.

How to prepare beet greens:
Thoroughly wash and boil the beets until cooked, strain the broth to use as the base for the greens, and dice the boiled beets into small cubes.
Bring 1 liter of water to a boil, add 1 tablespoon of salt and 2 bay leaves, and cook the fish for 2 minutes.
Remove the fish from the broth and allow it to cool. Cool the broth and strain it for the base for the greens.
Dice the peeled cucumbers in the same way. Finely chop dill, parsley, and green onions.
Blanch the spinach for 30 seconds in boiling water.
Remove from water and allow to cool.
Chop with a knife.
Then blanch the sorrel for 30 seconds.
Also dice it.
Place the beet greens in boiling water for 30 seconds.
Then chop them up.
Blanch the beet stems for 1 minute.
Dice the prepared beet stems into small cubes.
Blanch the nettle leaves the same way as the stems.
Then chop them finely.
Mix the chopped beets, beet stems, beet greens, spinach, nettle, dill, parsley, green onions, and fresh cucumbers in one bowl.
Stir.
Prepare the base for the greens. Pour the beet broth, fish broth, white and dark kvass into a bowl. Add salt, sugar, mustard, horseradish, and lemon juice. Mix everything thoroughly.
In a serving dish, place the prepared vegetables and greens and pour in the prepared base for the greens. Place finely chopped ice in a separate dish, place the fish on top, and serve with the greens.
