Start by peeling and finely chopping the beetroot and onion.
In a large saucepan, combine the beetroot, onion, white vinegar, granulated sugar, ground cinnamon, ground ginger, salt, ground cloves and water.
Bring the mixture to a boil over medium-high heat. Reduce the heat to low and let it simmer for 40 minutes, stirring occasionally.
After 40 minutes, the relish should have thickened and the beetroot should be tender. Remove from heat and let it cool.
Once cooled, transfer the relish to sterilized jars and seal tightly. Store in the refrigerator until ready to use.
