In a large mixing bowl, combine the flour and salt.
Add the cold unsalted butter and use a pastry cutter or your hands to cut it into the flour mixture until it resembles coarse crumbs.
Gradually add ice water, mixing until the dough comes together.
Divide the dough into 8 equal portions and shape them into disks. Wrap each disk in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 375°F (190°C).
In a separate bowl, combine the diced apples, granulated sugar, ground cinnamon, lemon juice, and cornstarch. Mix well to coat the apples.
Roll out each dough disk into a circle on a lightly floured surface.
Place a spoonful of the apple filling onto one half of the dough circle or square.
Fold the other half of the dough over the filling and seal the edges by pressing them together with a fork.
Repeat for the remaining dough disks and apple filling.
Place the turnovers on a baking sheet lined with parchment paper.
